I have only recently discovered the healthy, delicious joys of chia pudding. I love its unique consistency and am thrilled whenever someone serves it as a desert. It’s also easy to mash up the night before and have as a breakfast. Here is my go to recipe.

Well, I basically made no progress this week. I essentially copied last week’s formula of eating healthy during the week and bingeing on junk food during the weekend. Just to give you an idea of what I mean by junk food bingeing, here are some of the things I ate.
1.5 bags of potato chips
A giant piece of vegan chocolate cake
A vegan waffle with whipped cream and ice cream
A greasy Asian noodle box
A vegan ice cream cookie sandwich
A vegan Danish pastry
1 raw chocolate bounty bar
The biggest portion of Indian food imaginable
I’m being honest because I want people to be able to relate to the experience of failing to meet their goals. It’s easy to start thinking “once I slip-up I might as well give up” and “today doesn’t count, I’ll just start tomorrow”. These thoughts can lead to panicking and overeating when we should instead just enjoy our little slip-up and return to healthy eating as soon as possible.
No matter how much I try to avoid it, the weight loss mentality keeps creeping into my mind. I know it’s all in my head but it’s just so frustrating! I need to pull myself together; it’s just so damn hard!
I am persevering by forging ahead with small baby steps. After all, a healthy lifestyle is nothing but the aggregate of good and bad choices!
My mother recently hosted a friend for the weekend and, as she always does when we have guests, made a smorgasbord of her delicious cooking. I was tasked with making an appetizer plate of Mexican tapas to be served before the main course. I came up with this simple recipe using vegan minced meat, an avocado, taco bowls, store bought salsa, and a packet of taco seasoning.
I started by heating the taco bowls in the oven at 170c (340f). As they warmed, I fried the faux minced meat in a pan and added the taco seasoning. After filling the bowls with the meat, I simply topped each one with a few avocado slices and salsa.
These turned out to be extremely popular at our table and they disappeared quickly. I’m not a huge fan of meat substitutes but in small quantities they can really hit the spot. They’re also a great way to hook non-vegans and give them a peak behind the curtain of a cruelty-free lifestyle that doesn’t sacrifice taste.

The city itself is filled with medieval Nordic architecture, warm Jutlanders, and a quirky student/bohemian vibe. Such conditions make it fertile ground for new vegan restaurants to emerge.
The first spot we hit was “Ubat Veggie”, a newly opened upscale gourmet vegetarian restaurant. We both had the vegan risotto, which had a very pleasant umami flavor. However, the portion size was a bit small and my boyfriend started looking for falafel shops on my phone (he is a hungry man). We waited some time before getting our food so our waitress ended up giving us free plant milk coffees (yay) and when I was about to pay she compensated our meal. I consider that to demonstrate thoughtfulness and effort, and because of the tastiness of the food and having many different vegan options, I think I’ll give it another shot when I’m back in town.

We ended up having a marvellous brunch at Café Luna which is a cozy café with a bar kind of vibe. I got their specialty vegan brunch with tofu scrambled, rice paper bacon, bread with butter and vegan topping, soy yogurt with granola, fresh fruit, vegan cheese, hummus and a vegan pancake with maple syrup! My eyes were opened to tofu scramble for the first time! They can get really busy so make sure you make a reservation on weekends.

I also found a little boutique candy shop in the city center called “ Det Sunde Slik (The Healthy Candy)”. They have an endless array of dried fruits and encourage customers to sample anything they fancy. I spent some time marveling my way through the aisles until the sweet young woman behind the counter gave me some much needed guidance and assistance. My favorites were pomelo, strawberry, mango, ginger, watermelon, and shitake mushrooms (trust me). You can also order your dried fruit online here

The first week of my weight loss journey went well, albeit with a few minor slip ups (I went to the movies with my sister on Sunday and JUST HAD to have some of her popcorn and vegan candy). I started the week by trying to eat 6 small meals a day, but I couldn’t get my body to adjust to it and it felt unnatural. So instead, I opted to only eat when hungry or lacking energy.
I have made my meals healthier by focusing more and more on including vegetables into my home cooking (you might notice a theme here). One of my go to snacks has been carrot sticks dipped in hummus- a tasty, filling midday snack!
My biggest slip-up came over the weekend when my boyfriend and I were house-sitting for a neighbour. Something in our new environment sparked a glutinous whim within us and we bought a giant bag of curly fries from the grocery store to share (should have made my homemade oil-free fries instead!). Nonetheless, I felt I kept the wheels on the bus as I didn’t eat any other blatantly unhealthy foods, instead snacking on fruit and rice cakes.
I consider my first week a success! By focusing on my healthy choices and not dwelling on the slip-ups, I’m able to keep my momentum going. My goal this week is to not slip-up as much and make progress, however small. A healthy lifestyle and subsequent weight-loss is a marathon, not a sprint!
I could eat this soup for days on end. This is one of my go-to recipes that I serve whenever I cook for friends and/or family. I discovered it when visiting a non-vegan friend, as it was the only plant-based recipe she knew. I stole the recipe after learning how cheap, healthy, and easy to make it is!
Serve with sautéed mushrooms, oven baked chickpeas, a baguette, or sauté all of your leftover vegetables in soy sauce!
