Healthy Vegan Brown Rice Sushi

Recipes

It’s easy to enjoy sushi without fish. Vegan sushi tastes amazing and it’s super easy to make. It’s a great way to use your leftover rice and vegetables for a quick lunch.

You don’t need any fancy equipment for this recipe. I just roll the sushi on a cutting board carefully with steady hands. You’ll have the best results if you use sticky rice (although I used regular rice the first time, and it still ended up nicely)

What to do:

Place a sheet of seaweed paper on your cutting board and add two tbsp. of rice on top and then mash it down with a spoon. Place your filling at the bottom, closer to where you are standing (be careful not to add too much!). Then carefully roll the seaweed paper into a roll – the trick is to be slow and careful!

I like to make two different kinds; one with cucumber, avocado, and vegan crème cheese and the other with cucumber, avocado, carrot and spinach. You can add any veggies you like!

I dip mine in a soy sauce/wasabi mixture.

I hope this recipe will inspire you to start making your own delicious sushi!

Caramelized Vietnamese Style Tofu

Recipes

My boyfriend came up with this simple marinade that goes great with many different Asian cuisines. We usually serve it with rice noodles and traditional Vietnamese vegetables, but I’m sure it would mix well with other dishes or on its own.

For many unaccustomed Westerners, tofu can be difficult to appreciate. Most of us have experienced the dry, crumbly, flavour less variation served at certain Chinese restaurants. Therefore, it is of the utmost importance to invest in high quality organic tofu. Also, make sure to press it by wrapping it in a clean towel and placing a heavy object on top (such as a pan or heavy pan lid) for 15-20 minutes.

Vegan Chocolate Oatmeal Dream

Recipes

Oatmeal is healthy, filling, and lends itself very well to creative vegan recipes.

This recipe is a winner for those of you who love chocolate. Instead of using cocoa powder I use real dark chocolate. Let the chocolaty goodness commence!

LAZY VEGAN STIR FRY #4 – Tomato Veggie Pasta

Recipes

I grew up being told that pasta is junk food and should only be eaten rarely. Fortunately, research has shown that moderate amounts are still healthy and can be consumed while losing weight. Nothing beats treating myself to lunch with a bowl of whole grain pasta with veggies.

Nutritional Yeast is a great cheese substitute as it has a cheesy flavour and melts easily. AND it contains B-12, which is an important supplement to take as a vegan

Healthy Vegan Root Beet Waffles

Recipes

My body has learned to crave healthy food that tastes unhealthy! I like my breakfast sweet but also appreciate some vegetables in the morning. Waffles always satisfy my cravings as I can mix healthy things into the batter and still get awesome waffles! See my recipe for Spinach Avocado Waffles

The girly side of me is obsessed with the beautiful pink color the root beet adds to regular waffles. I was close to naming these waffles “Princess Waffles” but rediscovered my integrity at the last minute.

On a normal day I enjoy eating waffles as a snack but on a cozy weekend morning I top them with pumpkin seeds, coconut flour, maple syrup and a little yogurt mixed up with vanilla.

When you grate the root beets a food processor will do the trick, if you do it manually REMEMBER an apron; otherwise you’ll look like Ted Bundy before he’d clean himself up)

ENJOY!

Nutritional Yeast is da Bomb

Veganism

Nutritional Yeast makes it really easy to stick to a vegan diet. It’s the BEST cheese supplement I’ve found. It melts easily and has a wonderful, creamy, nutty, and well, cheesy flavour to it. I use it in pasta, sauces, or in my morning chickpea flour omelet.

Nutritional yeast is also really high in nutrition. The flakes contain B-vitamins, protein, calcium, zinc, iron, and a beta.-1.3 glycan which can improve your immune system and lower your cholesterol. As a vegan, it’s really important to take B-12 supplement, as you can’t get it from plants. A lot of non-vegans are B-12 deficient as well, so it’s ALWAYS a good idea to have it in your kitchen.

You can buy Nutritional Yeast in health stores or online here (Danish affiliate link) or here (U.S.affiliate link)

Easy Vegan Breakfast Ideas

Veganism

When my mornings are stressful I need my breakfast to be quick and healthy. This means oatmeal, yogurt, and toast. These simple staples are easy to spice up in a healthy way with fruit, seeds, veggies and nuts.

My favorite yogurt is Alpro’s lemon flavor. I’m addicted to all things citrus and this one has a subtle and mild sweet and sour balance (it does contain added sugar – sometimes a girl gotta live). I love a nice big bowl of yoghurt topped with bananas, oats, seeds, and walnuts.

I’ve also been a toast obsession recently. I use a neutral vegan crème cheese as a base and add spinach, cucumber, and salt.

As vegans, we are often at a loss as to what to eat for breakfast that isn’t either raw fruits and vegetables or incredibly expensive/time consuming meals like eggs Benedict with seitan Canadian bacon.I want more people to hit that happy medium that sustains them both through the day and their vegan journey. No need getting burnt out on raw fruits or spending an hour cooking breakfast (not that there’s anything wrong with that every once in a while). Just keep it simple, quick, and satisfying with these ideas.

Danish Vegan Raw Bliss Balls // Original Danish favorite “Romkugle”

Recipes

These are pastry balls with a pirate twists. “Romkugle”(rum-ball) is an old traditional Danish pastry made out of day-old pastries and rum essence. They are then formed into balls, dipped in chocolate, and rolled around in chocolate vermicelli. Trust me- I’ve spent years working in bakeries and the entire country of Denmark can vouch for their deliciousness!

My teenage sister Lærke came up with a healthy vegan version. Try not to eat them all by yourself in one sitting (yes I’ve done it).

Most frequently rum essence don’t contain alcohol but look at the ingredients before you buy.
