I’ve done a lot of thinking recently in regard to my evolving vegan journey. A YouTuber that used to inspire me recently revealed she is no longer a vegan. The idea of reverting back to consuming fish, eggs, and meat frightens me. I acknowledge that people slip-up occasionally, but cannot see the appeal of making a conscious choice to return to such a destructive lifestyle.
I guess the problem was the YouTuber I used to follow was vegan for health and lifestyle reasons, not to promote an anti-cruelty lifestyle. When you adopt a plant-based diet for health and lifestyle reasons you’re bound to abandon it the second you find it out of fashion or too challenging. Being vegan means that I wish to cause no harm to animals and allow them to live their lives unaffected by humans. Animals are friends, not food and not eating them is the right thing to do, not a dietary choice.
Well, I basically made no progress this week. I essentially copied last week’s formula of eating healthy during the week and bingeing on junk food during the weekend. Just to give you an idea of what I mean by junk food bingeing, here are some of the things I ate.
1.5 bags of potato chips
A giant piece of vegan chocolate cake
A vegan waffle with whipped cream and ice cream
A greasy Asian noodle box
A vegan ice cream cookie sandwich
A vegan Danish pastry
1 raw chocolate bounty bar
The biggest portion of Indian food imaginable
I’m being honest because I want people to be able to relate to the experience of failing to meet their goals. It’s easy to start thinking “once I slip-up I might as well give up” and “today doesn’t count, I’ll just start tomorrow”. These thoughts can lead to panicking and overeating when we should instead just enjoy our little slip-up and return to healthy eating as soon as possible.
No matter how much I try to avoid it, the weight loss mentality keeps creeping into my mind. I know it’s all in my head but it’s just so frustrating! I need to pull myself together; it’s just so damn hard!
I am persevering by forging ahead with small baby steps. After all, a healthy lifestyle is nothing but the aggregate of good and bad choices!
I’m not kidding when I say that this is the best vegan snack
I’ve ever had. Instead of going with overpriced cranked up sugar cookies you
can blend together your own cheap and easy Friday night treat. It tastes divine
and is the perfect finishing touch to a stay-in date night under the covers. A smooth
and soft consistency with peanut butter and dark chocolate flavors will please
your taste buds.
For a more authentic cookie dough aesthetic you can use chocolate chips instead of dark chocolate. This recipe tastes much better when cold so make sure you cool it down before you dig in (without letting it cool you might sense a slight chickpea aroma)

These are pastry balls with a pirate twists. “Romkugle”(rum-ball) is an old traditional Danish pastry made out of day-old pastries and rum essence. They are then formed into balls, dipped in chocolate, and rolled around in chocolate vermicelli. Trust me- I’ve spent years working in bakeries and the entire country of Denmark can vouch for their deliciousness!
My teenage sister Lærke came up with a healthy vegan version. Try not to eat them all by yourself in one sitting (yes I’ve done it).
Most frequently rum essence don’t contain alcohol but look at the ingredients before you buy.
It can be a real hassle to figure out which vegan diet to choose. Things like raw, Keto, and plant-based get thrown around a lot.Fortunately, you don’t have to follow any of these diets to be a vegan.
I don’t think it’s healthy to restrict your food. I try to use common sense and cravings to guide what I eat. Sadly, I’ve been counting calories since I was 12 years old. That has resulted in me always knowing how many calories a certain food has and allotting my daily total. I don’t support calorie counting and I wished I could turn the part of my brain that does it off. It can be difficult enjoying food sometimes because in the back of my head I’m counting calories.
I’ve spent some time carefully diving into vegan diets. I’ve found that a plant-based diet works best for me (a plant-based diet consists of fruits, vegetables, and whole grains while avoiding processed foods). These whole, nutritional foods always fill me up and don’t give me a sense of restriction. Although processed vegan food tends to contain much more fat, salt, and sugar than whole foods, I will admit that I enjoy them occasionally. My boyfriend is a huge fan of vegan Döner Kebab and I think vegan meat and cheese substitutes are great for those in transition.
As long as its vegan, I try to never restrict myself. I enjoy when my sister makes fries dripping with olive oil or when my boyfriend cooks Mexican food with meat substitutes and vegan cheese. I need to live a life where food brings me joy AND nutrition. Before I went vegan I saw food as a mix between an addiction and an enemy. That is not a healthy mindset and I’m grateful that I am able to enjoy all kinds of vegan foods now.
