Vegan Avocado Basil Zoodles

I know my recipes are always good, but man, I’ve really been knocking it out of the park recently. I made this bowl of zucchini noodles (from now on to be known as zoodles) for lunch the other day and it tasted heavenly! The fat creamy avocado dressing goes divinely with the salty sundried tomatoes. When mixed with zoodles the result is to die for!

I suggest using a spiralizer to make your zoodles, although cutting them into thin pieces works as well. Spiralizers can be pretty expensive and you should only invest in one if you think you’re going to use it. I have a cheap one I use exclusively for zucchini and carrots and could ultimately live without it.

Lazy Vegan Stir Fry #3 – Peanut Pineapple Noodles


I never tire of using nuts and fruits in my dishes. I love the delicious spice it gives a normal dish or salad. Asian food inspires me due to its exotic flavours and significant nutritional value. I made Stir Fry for lunch earlier this week and it turned out really well.

*Tip add Asian chili sauce for a taste orgasme!

Stir-fry makes for great leftovers and is the perfect next-day meal for work or school. ENJOY

Lazy Vegan Stir Fry #1 – Creamy Green Pasta


I love Stir Fry. It’s quick, tasty, and let’s you get rid of your leftovers. What’s not to love? Since I moved away from home, Stir Fry has become one of my go to meals. I often cook it for lunch or whenever I’m cooking for myself.  

I always freestyle the ingredients and add whatever I find in the kitchen or freezer. This recipe I made recently was extremely filling and delicious so it’s a great starting point for those new to Stir Fry.


Vegan Chia Pancakes with Strawberry Sauce


The portion size is for two people but they were so good I ended up eating them all by myself. No regrets though. These pancakes are a perfect, healthy, wholesome breakfast that’s full of nutrition. I hope you will enjoy them, perhaps on a rainy Sunday.

Nice Cream with spinach, topped with walnuts and pomegranate

My first words were spoken when I pointed at the door of our basement and said “ice cream”. Ice cream has always been my favorite dessert. I thought it would be the hardest thing giving up becoming a vegan, but I was so wrong. Vegan ice cream is so good! There are so many different brands and flavors- even Ben and Jerry’s has its own vegan flavor (Chocolate Fudge Brownie and Peanut Butter & Cookies).

As delicious and wonderful as ice cream is, it is also full of sugar and fat, even the vegan kind… BUT SAVE YOUR TEARS- The answer is Nice Cream.

It is super easy to make and rich in nutrition.
